I'll speak for Richlands and I can give some outside perspective on Union since we play them every year.
For Richlands, we are very much a spread offense. You'll rarely ever see us trot less than 3 WR out for our sets, and we (in my best guesstimation) are a 65-35 Passing team. Not uncommon to see us go 5 wide and then turn around and have two TEs the next play, but still keeping 2/3 WR on the field. Against Union, we had some great success running the ball, so we can go to more of a running team if that's what the defense allows.
Richlands has scored 132 points through three games, but if you count the fact that in the first and third games our starting offense only played 1 series in the second half, we really have 132 point through about 8 quarters of 1st string offense. If a defense loads the box, we have 5 WR and a TE who are more than capable of catching passes down field and burning you over the top, and two WRs that are 6'4 with two more at 6'2. The TE also goes 6'2 and about 250 lbs and will light you up on defense. If teams decide to play more nickel and zone looks, we have two RBs (one is hurt for the next few weeks) that can run the ball behind our big OL.
So with Richlands, it's really pick you poison as far as how to defend. Even with 5 turnovers against Union, we still had 41 points and were an XP away from going into 2OT.
Against Richlands, Union came out in a spread look and had mild success, but their success against us came from lining up in a wing T offense with lots of misdirection. We had some starters banged up and one starting LB playing with a dislocated elbow in that game. But they have two very tall (6'4) receivers that can run fast and jump high.
Hope that helps a bit.
