Noticed some games are being called forfeits with schools getting wins or losses while others are just cancelled - assuming all are COVID related- anybody know why difference?

It can be either. The teams decide what it will go down as. The 1st option is to reschedule. The team that has the issue (covid) can choose to forfeit or teams can agree to no contest. If the teams are not in agreement about course of action and in same district then the district decides. If they are in different district then a committee is formed out of the region and it decides.
So how is this all going to work with power points? Do the canceling of games due to COVID that are not made up go against the team that canceled? So the opponent gets the win if they do not have a make up game in its place? Just curious at the end of the regular season will all teams have their points divided by different amounts of games as it seems as we get into the season more and more games are getting canceled on a weekly basis and less time for make up games?

Depends if game is no contest or forfeit. If no contest then divide by number of games played. If forfeit, "winning" team gets awarded like normal victory.
good catch. It's not 'played' played, but it IS still a game "played", with a score (1-0).
